I hate anchovies but love this siciliana sauce. I have to pick anchovies out of pizza because they are way too strong and fishy tasting for me.
BUT, THIS IS DEFINITELY MY FAVOURITE SAUCE. You can’t taste the anchovies, they just add a little more dimension to the sauce. Oh, and guess what, we took sugar out of our sauces several years ago.
My father in law Sam, simply told our team to caramelise our onion in the sauce for longer, and this adds a natural sweetness without the need for adding sugar. You don’t need it and you won’t miss it.
We constantly have customers raving about our sauce, telling us how close it is to when nonna made sauce. We make it commercially, but it’s one of the closest to nonna’s home made sauces you can get.
