Amazing New Gluten Free Options

Gluten free options are now highly sought after and thankfully over the past 10 years the options, quality, flavour and texture have all dramatically improved. Being in the health industry for many years, I have seen the development of cardboard textured and flavoured pasta as the only option to now a vast variety of options. And thankfully so, as more and more people seem to be reacting to gluten or report to feel better in general when avoiding gluten products.

So the good news is that we have been very actively working on a range of gluten free and gluten friendly pastas, arancinis and more that have amazing texture, incredible flavours and that are fast and easy to prepare.

So what is the difference between gluten free and gluten friendly?

Gluten free is made with zero gluten in the ingredients and no risk of cross contamination. These products are prepared in a kitchen without gluten. So for the like of celiacs they offer a very safe option.

Gluten friendly products are those made containing zero gluten ingredients but are made in a kitchen that makes other products with gluten. Gluten friendly pastas and products are suitable for those who choose to avoid gluten as a lifestyle and dietary choice but are not going to react should there be some tiny amounts of gluten in the air or that manage to work their way into the gluten free ingredients.

As health is one of the most important factors in a persons life, we feel one of the most important things for our business is to clearly advise all our customers what products are gluten free and what ones are gluten friendly, so you can make your own dietary decisions based on clear facts.

So now that the definitions and facts are clarified, let me tell you about our amazing new gluten friendly and gluten free products we have developed.

Gluten Friendly Pumpkin Feta Arancini
We have made this using polenta for crumbing, it is cooked in the same oil we use to cook our other arancinis that do have gluten, but have zero gluten ingredients in the actual arancini.

Jackfruit Curry Arancini
This is very different, new and exciting. We made this using desiccated coconut on the outside instead of wheat flour and jackfruit inside which is an amazing non flavoured fruit with a meaty type texture. We have added curry to this and I have to say it tasted amazing!! Simply heat in the oven or air fryer from frozen like all our meals and serve. It makes a really great entertainer and snack.

Gluten Free Ricotta Spinach Ravioli
This is certified gluten free and made in a kitchen that contains no gluten. Perfect for celiacs. Great texture and it’s so good you would not even know it’s gluten free.

Sauces
All our Tomato based sauces (we currently have 3 types) and pesto sauce are gluten friendly. They contain no gluten ingredients but are made in our kitchen containing gluten. Sauces are a lot easier to make without gluten than pasta!!

Macaroni/ Gemelli / Spaghetti
These are 3 varieties of gluten friendly pastas we have started making. All fresh frozen, and should be cooked from frozen (don’t thaw them first). Corn is one of the main ingredient we use. Texture is great!!

Coming Soon;
We have just wiped up a gluten friendly Harvey beef lasagna and I have to tell you it was absolutely fantastic! We made it using a new gluten friendly béchamel recipe my Sicilian father in law created and it tastes creamy and absolutely amazing! So good in fact I think it gives our usual lasagnas a run for their money. Consensus is that we could not actually tell it was gluten friendly! So stay tuned for this one as it will be a real game changer.

Australia’s Biggest Choice of Tasty Fast Casual Restaurant Gluten Free Pastas

Pasta is rarely associated with Gluten Free food and although more gluten free pasta options are becoming available for consumption, in the past gluten free pasta has had some pretty bad associations with flavourless cardboard!

At Tommy Sugo, we are passionate about changing this concept. As a result we offer lots of gluten free pastas, sauces and meals.

Hello my name is Nathan and I started Tommy Sugo in 2014. Prior to Tommy Sugo being created, I worked as a naturopath helping people deal with the likes of celiac disease and gluten and wheat allergies and sensitivities. Back in the day when I was in my naturopathic practice, choices of good flavoursome foods…particularly pasta were considerably limited. Now it’s a different story, which is good because food allergies are massively on the rise.

So it’s been a passion of mine to create a menu at Tommy Sugo of gluten free pasta that offer our customers choice, have great texture and taste amazing…even for consumers without sensitivities to enjoy.

Gluten sensitivities and allergies need to be treated with care, sensitivity and knowledge. Cross contamination and knowledge of gluten segregation within the production kitchen are an absolute must when it comes to gluten free pasta production.

When we are making the likes of our gluten free gnocchi (made from potato, rice and corn flour), we apply the following procedures

1) We always make our gluten free pastas first thing in the morning on our pasta machines and implements have not been used for any other products that day

2) All food production equipment is thoroughly and meticulously clean at the end of every day – we are absolutely pedantic about this!

3) In our commercial pasta production kitchen, we follow strict HAASP regulations, which govern health and safety within the kitchen. These are best practice methods and have strictly enforced regulations that ensure some of the highest health standards in the word in the food industry.

4) All Tommy Sugo procedures are based around knowledge related to minimising gluten cross contamination within the kitchen. As we make both traditional and gluten free pasta, we follow strict procedures related to using only gluten free cooking implements for gluten free production and cooking.

5) Pasta is cooked completely separately from our other standard gluten pastas, further limiting exposure to gluten (ensure you request this when ordering).

With our passion for providing great gluten free pasta, sauces and meals, we educate our staff and strive to minimise any gluten reactivity and hopefully providing knowledge that you can finally grab a pasta dine in or take away with the assurance we are doing our best to minimise reactivity.

Naturally we are also realistic and aware that in a kitchen of other gluten pastas the likes of gluten in the air can also be a possibility so although we can not guarantee 100% gluten free, we will always take 110% care to ensure we minimise chances of gluten cross contamination. The results speak for them selves as we have now served over 10,000 gluten free meals with many very happy gluten free and celiac customers purchasing our meals repetitively.

Our Gluten Friendly Dishes

 

Gluten Friendly Gnocchi: made of rice, potato and corn flour. This is one of our best selling pastas, and we use our gluten free gnocchi as our standard gnocchi we use in our restaurants. Texture is soft and fluffy with a small amount of bite.

Gluten Friendly Penne: (coming soon) made from brown rice, small tubes of pasta, great with any of our gluten free sauce options

Spaghetti Gluten Friendly Organic Chia & Black Rice: (coming soon) This is different and seriously yummy! Great texture, dark colour and tasts amazing! Its made out of organic black rice and organic chia. Goes well with all our sauce options.

 

Zero Carb Gluten friendly Conjac Linguini: (coming soon) ok so this is for the adventurous among us. Super healthy, has no carbs…that is correct, this pasta has zero, zip, no, nothing in the carb count. It’s a little chewy in texture. Made from the Conjac plant root, which is a plant native to Asia. Combine it with one of our gluten free high protein sauces (like Tommy Sugo sauce with beef, chicken and tomato), and you have a meal great for weight control and gluten free.

Low Carb Zucchini Spaghetti: this is our 100% zucchini that we spiralise and very lightly blanch. It’s basically raw, and then we add a hot sauce over the top. Very healthy. Looks like spaghetti, but is 100% zucchini.

The Double Act: Also made for 100% spirlised zucchini & sweet potato. Tasty and a great healthy very low carb meal.
